Korean Kimchi Seafood Soup

quick and easy soup from Seoul for the Soul. This soup satisfy that craving for everything Korean! It has the spice, the seafood, the umami, and all the deep richness of Korean flavors like seasame oil, Dashi and chili. If you have the ingreditents it comes together in a flash.

Ingredients
  

  • 1/2 cup sweet onion diced
  • 3 cloves garlic minced
  • 1/2 cup mushrooms sliced (any kind you like – shiitake, button, etc.)
  • 1 cup chopped kimchi with 2 tablespoons of kimchi juice
  • 1 Jalepeno chopped
  • 3 cups beef broth
  • 1 teaspoon dashi granules
  • 1 teaspoon soybean paste doenjang
  • 2 teaspoons sesame oil
  • 1 teaspoon chili crunch oil like Momofuku Chili Crunch
  • 2 tablespoons shredded wakame seaweed dried
  • 6 ounces small shrimp raw (peeled and deveined)
  • 6 sticks imitation crab meat roughly chopped
  • 1 teaspoon grated fresh ginger optional, but recommended based on your notes!
  • Extra kimchi for serving

Instructions
 

  • Sauté the Aromatics: Heat the sesame oil in a large pot or Dutch oven over medium heat. Add the onion, garlic, mushrooms, and ginger (if using) and sauté until softened, about 5-7 minutes.
  • Add Kimchi: Stir in the chopped kimchi and kimchi juice. Cook for another 2-3 minutes, allowing the kimchi to slightly caramelize.
  • Build the Broth: Pour in the beef broth, and bring to a boil. Add the dashi granules and soybean paste, stirring until dissolved.
  • Simmer: Reduce heat to low and simmer for about 10 minutes to allow the flavors to meld.
  • Add Seafood and Seaweed: Add the shrimp, imitation crab meat, and wakame seaweed. Simmer for another 3-5 minutes, or until the shrimp is pink and cooked through.
  • Finish and Serve: Stir in the chili crunch oil. Taste and adjust seasoning if needed. Ladle the soup into bowls and serve hot, with extra kimchi on the side.

Tips and Variations:

  • Spice Level: Adjust the amount of chili crunch oil to your preferred level of heat.
  • Protein: Feel free to substitute the shrimp with other seafood like scallops, mussels, or firm white fish.
  • Vegetables: Add other vegetables like sliced carrots, chopped bok choy, or spinach for extra nutrition and flavor.
  • Noodles: Cook some noodles separately and add them to your bowl for a heartier meal. Ramen, udon, or even rice noodles would work well.
  • Vegetarian: Use vegetable broth instead of beef broth and omit the shrimp and crab meat for a vegetarian version. You could add tofu for protein.
