I dream about Thai food. I love it so much that I’ve spent 30 years mastering it in my own kitchen, searching for that perfect balance of heat, acid, sweetness, and sour  that makes this cuisine so Unique and set apart. And let me assert here—Lotus of Siam might just be the best Thai restaurant in the country. And trust me when I say I have eaten at the top thai restaurants in dozens of cities across the county.  If you love Thai food like I do, you have to experience this place.

Yes, it’s off the Strip. Yes, it takes a little effort to get there. But trust me, it’s worth every second. There were 4 of us traveling together, and as you walk in, the energy is welcoming and slightly upscale.  We had just landed and were not in the dressiest attire, but we felt perfectly comfortable.  We even had luggage in tow, which they stored for us while we ate. My excited was at an all time high, the aromas, the crowded dining room—this is where Thai food lovers come to feast.. Every time I visit, I discover something new on the menu that concretizes its place at the top of my list of best Thai food in America

The menu is a Thai food lover’s dream come true. It’s massive, with an entire section dedicated to Issan Thai flavors—northern Thai cuisine, which is hard to find in the U.S. I will see menus with a tributary dish or two, but this section shouts out, “we got you covered, we know Issan”.  This is not your typical “pad thai and red curry” spot (though those are exceptional, too). This is next-level Thai food, the kind that makes you stop mid-bite, close your eyes, and get all verklempt.  Seriously, I have shed a tear here.

The Dishes That Blew Me Away

First up: Nam Kao Tod. This dish isn’t on many Thai menus, so if you’re here, order it. It’s a crazy-good mix of sour-cured pork, crispy fried rice, curry paste, ginger, peanuts, scallions—every bite is a wild ride of flavor and texture. And that crunch? Unreal. Layers and layers of flavors and textures evolve into bit after bit of discovery.  This Dish is a highlight, pure delight, must order appetizer.

Mee Krob is another must. Light, crispy, sweet, and just barely kissed with shrimp and chicken, it’s the perfect way to warm up your taste buds. It might look simple, but the way the flavors play together is unreal and like Nam Kao Tod, the texture is multivers.  So much going on here folks.  I make this at home regularly, and do this pretty well.  But this version is my inspiration.  I can’t get close to the perfected nuances of the sauce, and bits and pieces of goodness.

 

And then there’s Papaya Salad. I love this dish—love it—and Lotus of Siam’s version? Absolute perfection. The sweet, tangy, funky, spicy balance was spot-on. I ordered a level 7 out of 10 for heat, and it was just right—enough to make my lips tingle but still let every flavor shine.

But let me tell you about the dish that made me cry: Crispy Duck Kao Soi. Kao Soi is one of my all-time favorite Thai dishes, another dishh  I’ve perfected it in my own kitchen. So my standards? Ridiculously high. But this… this was on a whole other level. The duck? Crispy, juicy, absolute perfection. The broth? Deep, rich, creamy, and packed with layers of spice, coconut and flavors borrowed from Thailands nearby influencers, Burma and India. I took a bite and just paused, letting it sink in. This dish alone is worth the trip.

Ok, I am just getting started.  There is more.   if you love shrimp, Grilled Shrimp with Garlic Pepper Sauce is non-negotiable. The shrimp were grilled just right—tender, slightly smoky—and that garlic pepper sauce exploded with flavor in the best way possible.

Then came the Pad Thai—and let me just say, a Thai restaurant lives and dies by its Pad Thai. If they can’t nail this, I don’t trust them. But Lotus of Siam? They nailed it. Saucy but not drippy, sweet but balanced, with a pinkish hue that tells me it’s made with care—likely from a mix of paprika, sriracha, and/or chili powder. This was textbook Pad Thai, and I’ll be thinking about it for months.

For something heartier, Basil Veggie Fried Rice was ordered at the table and was packed with fresh veggies and so lots of fragrant Thai basil.  My friend said every bite felt like a flavor bomb. Panang Veggie Curry was another knockout—rich, complex, deeply satisfying. If you are a curry lover you can’t go wrong with any of their options.

The only miss? The Ribeye. A solid steak, cooked beautifully, but in a meal this packed with explosive Thai flavors, it just didn’t hold up. Would I order it again? No. Would I trade it for another round of Kao Soi? In a heartbeat.

Final Verdict

If you love Thai food, you absolutely cannot skip Lotus of Siam. It’s worth the short trip off the Strip (and let’s be real, if you’re in Vegas for more than a few days, you need a break from the madness anyway). The menu is vast, and every visit is a chance to try something new and exciting. From the flawless Pad Thai to the rich Panang Curry to the unforgettable Crispy Duck Kao Soi, this is the gold standard for Thai cuisine in the U.S.

I go here every time I’m in Vegas. And you should too.
